I've gotten a lot of requests for quick and easy appetizers. These are the fastest I've got - and they are ALL winners...
Roasted Raspberry Chipotle Dip

Roasted Raspberry Chipotle Dip
2 cucumbers
8-12 ounces crumbled feta
3 tablespoons Greek yogurt
3 tablespoons finely diced sundried tomatoes
1 tablespoon roughly chopped dill or oregano
2 teaspoons lemon juice
salt & pepper to taste
Add the feta and yogurt to a medium bowl. Mash to combine using a fork. Add the rest of the ingredients. Stir well to combine. Refrigerate before serving. Serve with sliced cucumbers.
