Peach Bruschetta

I saw this recipe on the Food Network's Kitchen tv show. It looked SO GOOD! My husband was working at the kitchen table while the episode was on and later that night while we were talking about what to have for dinner, he mentioned this recipe - I didn't even know he was watching!

It. is. so. delicious. I'll definitely be making this on repeat!


Peach Bruschetta
1 French baguette, sliced 1/4 inch thick
1/4 cup olive oil
3 large peaches, cut into small dice
2 tablespoons chopped fresh basil
1/4 teaspoon kosher salt
4 ounces goat cheese

Preheat the oven to 350 degrees F. Lay the baguette pieces in a single layer on a parchment-lined baking sheet, brush both sides with 3 tablespoons of the olive oil and bake until golden brown, 15 to 18 minutes.

In a medium bowl, toss together the peaches, basil, salt, 1 tablespoon olive oil and hot honey (to taste).

To build the bruschetta, start with a piece of baguette, spread with the goat cheese, spoon on some of the peach mixture.

Patriotic Party Mix




Patriotic Party Mix
4 cups Chex cereal
3 cups Cheerios
3 cups pretzels mini's
1–1/2 cups slivered almonds
1 1/2 bags vanilla candy wafers (18 oz total)
Red, white and blue sprinkles
2 packs "sharable" 4th of July M&M’s

Instructions
In a large bowl, combine the Chex cereal, Cheerios, pretzels, almonds and M&M's.
In a microwave safe bowl, melt the candy wafers in 30 second intervals until melted and smooth. 
Pour the melted chocolate over the ingredients in the large bowl and toss to coat with a large spoon. Ingredients should be evenly coated.
Immediately sprinkle with the sprinkles. Allow mixture to cool completely. Break apart to serve. Store in an airtight container or baggie.
