2 mahi mahi steaks
1 T minced garlic
1/4 c butter
½ onion diced
1/2 lemon, juiced
1/4 cup dry white wine
15 oz cans diced tomatoes
4 oz diced green chilissalt and pepper to taste
Preheat grill for high heat.
Mix the butter and garlic and pour in an aluminum foil pan. Place
mahi mahi steaks on top of the butter mixture. Spread onions over fish. Pour
the lemon juice, wine, and diced tomatoes with green chili peppers over the
fish. Season with salt and pepper. Tightly cover pan with aluminum foil.
Place pan on the grill grate, and cook fish 30 minutes, or
until easily flaked with a fork.
